Fermented Foods Are More Digestible & Safer To Eat Than Many Raw Foods

eg. sauerkraut and cabbage – sources of probiotic and prebiotic – dairy free, raw, vegan food, respectively,

Recipe Sauerkraut

SINGLE JAR SAUERKRAUT RECIPE

Cabbage – 1 small to medium – approx 2 ounces
1 Tablespoon medium grain sea salt or non-iodised salt
1 Teaspoon caraway seeds, juniper berries (optional)

  1. Cut the cabbage in half. Cut out the thick core and stem end and compost or discard them.Thinly slice the cabbage into shreds or small pieces (think coleslaw)
  2. Loosely pack the sliced cabbage into a clean, wide mouth glass jars, sprinkling in the salt as well as the caraway seeds and juniper berries (if using) as you fill the jars. It is not necessary to sterilise the jars for lacto-fermented foods. the jars do have to be pristine clean, however. Pack the cabbage, salt and spices down firmly as you add them to the jar. Once the jar is almost full, loosely cover it and let it sit for 2 to 4 hours. During this time the salt should draw enough juice out of the cabbage to completely cover the solid food. If it doesn’t, top the kraut off with a brine made of 1 teaspoon non-iodised salt dissolved in 1 pint filtered or non-chlorinated water.
  3. Pour the salt brine, if necessary, over the cabbage and spices. Gently press down on the cabbage and spices to release any air bubbles and to submerge them in the brine. Cover the jar loosely with a lid. Place the jar on a plate to catch any overflow that may happen once active fermentation gets going. Leave the jars at room temperature for 3 days. During this time, remove the covers at least once a day and check to see that the vegetables are still submerged in the brine (add additional salt brine if necessary). You should start to see some bubbles on top – a sign that fermentation is underway.
  4. By the end of the 3 days, the sauerkraut should have a clean, lightly sour smell and taste. Put the jars in the refrigerator (no need to put plates under them at this stage). Wait at least 5 more days for the flavor of your sauerkraut to develop. This recipe also works well with red cabbage.

Lacto-fermentation is the process that produces traditional dill pickles, kimchi and sauerkraut.

Lactic acid is a natural preservative that inhibits the growth of harmful bacteria.

The “lacto” portion of the term refers to a specific species of bacteria, namely Lactobacillus. Various strains of these bacteria are present on the surface of all plants, especially those growing close to the ground, and are also common to the gastrointestinal tracts, mouths, and vaginas of humans and other animal species.

Lactobacillus bacteria have the ability to convert sugars into lactic acid. The Lactobacillus strain is so named because it was first studied in milk ferments. These bacteria readily use lactose or other sugars and convert them quickly and easily to lactic acid. However, lacto-fermentation does not necessarily need to involve dairy products.

Are our genes making us fat? Do we inherit chronic skin conditions & hair loss? DNA Methylation Epigenetics Our DNA contains instructions for building all parts of our body. So, although genetic polymorphisms predispose us to developing a certain health condition, epigenetics or how our environment impacts our genes plays a larger role in the development of a chronic condition such as eczema. 1) 2)

  • The DNA in our bodies is wrapped around proteins called histones.
  • Both the DNA and histones are covered with chemical tags. This second layer or structure is called the Epigenome.
  • The epigenome shapes the physical structure of the genome. It tightly wraps inactive genes making them unreadable. It relaxes active genes making them easily accessible.
  • Different sets of genes are active in differential types.
  • The DNA code remains fixed for life but the epigenome is flexible.
  • Epigenetic tags react to signals from the outside world such as diet and stress. The epigenome dynamically responds to the environment. Stress, diet, behavior, toxins, and other factors regulate gene expression.
  • The epigenome adjusts specific genes in our genomic landscape that responds to our rapidly changing environment.

Our body is a system, an ecosystem where everything is connected. When that system is out of balance, diseases arises.

Nutrigenomics teaches us how to prevent, treat and reverse almost every chronic illness. Chronic disease include diabetes, high blood pressure, depression, allergies, asthma, IBS, reflux, migraines, acne, low sex drive, fatigue and more.

Immune Modulation and Chronic Inflammation

Chronic inflammatory disorders such as eczema, acne and psoriasis – skin conditions – are characterised by a hyper responsive immune system.  10 key epigenetic factors must be addressed to regulate and better coordinate our immune response.

1.  Blood Sugar instability  Blood sugar imbalances cause immune dysfunction and malcoordination.  Stable blood sugar is critical for a healthy immune response.

2.  Low Vitamin D Levels Individuals with low vitamin D3 levels (below 40 ng/ml) are at significant risk for developing chronic inflammation and allergy-like conditions 3)

3.   Gut Dysbiosis  Unhealthy microbial imbalance in the gut microbiome leads to leaky gut syndrome and chronic inflammation 4) so we’ve got to address gut issues in order to get well.

4.   Mitochondrial Dysfunction  The mitochondria are the energy producing organelles in each cell of the body.  They are extremely key in the bodies ability to handle oxidative stress.  Dysfunction in the mitochondria leads to increased free radical and oxidative stress which creates immune alterations. Low Glutathione Levels. Glutathione is the major antioxidant within every cell of the body.  It’s critical for white blood cell (WBC) function as the WBCs encounter tremendous amounts of free radical and oxidative stress every second of the day. Low glutathione leads to chronic inflammation and often to auto-immunity 5).

6.  Methylation. Methylation is a key process that protects DNA, turns on and off genetic traits and helps to detoxify environmental chemicals.  Many of us individuals have certain genetic polymorphisms that limit their ability to appropriately methylate. Methylation plays a very important role in T cell function and poor methylation status is associated with the development of autoimmunity. Psoriasis is a T cell mediated inflammatory skin disease. 6)  Poor Omega 6:3 ratio  – the average person has significantly more omega 6 fats than omega 3 fats.  The increased omega 6 stimulate the release of pro-inflammatory mediating prostaglandin molecules.  This is a key factor in the development of chronic inflammation and skin related disorders 7).

7.  Environmental Toxins:  Exposure to high levels of infectious microbes, environmental chemicals, pesticides, herbicides, beauty, hygiene and other personal care products, heavy metals and biotoxins e.g. mold. These wear down our body’s glutathione levels, alter the gut microflora and increase inflammatory activity in the body (7, 8, 9).

8.  High Stress High mental and emotional stress increases stress hormone production. This changes our posture and the way we breathe, which in turn induces inflammatory activity within the body. Poor posture, breathing and musculoskeletal aches and pain that result can simulate chronic mental and emotional stressors 10)

Candida albicans is a topic of high debate between complementary therapists and the medical community. Mainly, because diagnosing the presence of candida albicans was inaccurate. Diagnosis by symptoms can be accurate. However, it’s just not enough data to functionally treat candida overgrowth. Functional analysis

Making complex carbohydrates even more difficult to break down is mentioned as part of the functional approach. This is the theory with Gut and Psychology Syndrome GAPS and Specific Carbohydrate Diet (SCD). The organic acids test is a really good place to start.

Not enough iron means red blood cells are fewer and smaller. So, they’re not transporting sufficient O2 where it needs to go. If you suspect that you may be iron deficient, make an appointment with your doctor. He or she will probably look for signs of anemia or anaemia such as pale skin, irregular heartbeat, rapid breathing, capillary refill. They might also do an exam to check for internal bleeding. However, most commonly, iron deficiency is found by doing a blood test that tests for hemoglobin and hematocrit levels.

Heme iron

CAN WE GET A VEGAN RECIPE with heme iron? Heme iron is found in meats, fish, and poultry. This type of iron is in foods that contain hemoglobin. The body absorbs 7-35% of heme iron.

Non heme iron

This is found in plant foods. The body absorbs 2-20% of non-heme iron. The percentage is lower because non-heme iron is more sensitive to other dietary factors that may limit its absorption. You can be inspired by vegan recipes to eat such iron rich plant foods.
One research study showed that by adding just 63mg of vitamin C (the amount in ½ of a bell pepper or 1 small orange) to a meal, iron absorption from plant foods tripled. Vitamin C is an acid, ascorbic acid and acids increase the bioavailability of the iron.

It is possible to eat lots of iron rich plant foods or animal-based foods and still be anemic or anaemic. Often this is because of a weakened digestive system due to celiac disease, inflammatory bowel disease IBS, or other conditions that cause insufficient stomach acid. In these cases, 25-50 mg of daily iron supplementation may be recommended. Always check with your doctor for specific recommendations.

In fact some studies show that vegans consume as much iron as omnivores and sometimes more.

This is especially the case if someone is iron deficient. While meat protein nearly doubles the absorption of non-heme iron vitamin C is even more effective in increasing absorption.

Lower iron levels

Tannins found in tea leaves, red grapes, chocolate and coffee block the absorption of iron by about 50% (study here). However, consuming these foods an hour before or an hour after the iron rich meal has no effect on iron absorption. Vegan recipes can be inspiring ways to get more plat based iron rich foods combined with the right amounts of vitamin C.
Phytates are important antioxidants and anti-inflammatory agents found in highest quantities in wheat bran, soybeans, peanuts, pinto beans, kidney beans etc. Phytates bind to non-heme iron and lower its absorption. But soaking, fermenting, sprouting, and cooking all reduce phytate content by 50-75%.

IVF involves stimulating and retrieving multiple mature eggs from a woman, fertilising them with a man’s sperm in a dish in a lab, and implanting the embryos in the uterus three to five days after fertilisation.

The success rate of ART is lower after age 35. This is according to new figures on infertility treatment us and outcomes. these figures are released annually by the Human Fertilisation and Embryology Authority (HFEA).

GENETIC and CHROMOSOMAL issues causing FAILURE OF IMPLANTATION in IVF – The high rate of chromosomal abnormalities in human embryos.

  • As women age, the incidence of chromosomal abnormalities in mature eggs increases significantly. Studies have shown that starting in early 30s, the rate of chromosomal abnormalities in human eggs (and therefore in human embryos) starts to increase significantly.
  • The rate continues to increase with advancing female age. By mid-40s a very high percentage of human embryos are chromosomally abnormal (over 75%).
  • It’s believed that this is mainly due to problems with the spindle apparatus in the egg nucleus. The spindle is involved with properly lining up and segregating the chromosomes as the egg matures at the time of ovulation.
  • Older eggs have an inefficient spindle apparatus that does not line up the chromosome pairs properly. “Mistakes” are made when splitting pairs of chromosomes. This leads to eggs that don’t have the proper balance of 23 chromosomes – and will result in a chromosomally abnormal embryo if fertilised.
  • It has been shown that about 1% to 2% of human sperm are chromosomally abnormal on average – as compared to about 20% to 90% of human eggs (depending on female age).

Other “genetic causes” of implantation failure

  • Implantation failure is probably caused by other genetic mutations sometimes. With a perfectly normal “karyotype” or chromosome complement.
  • There are tens of thousands of genes in the human genome. A lot of places where something can go wrong.
  • With time there will be genes discovered that are crucial for efficient embryo implantation. These will be both on the embryo side and on the uterine side. Perhaps they will involve the immune system as well.

COC, combined pill, ‘The Pill’, COCP – The combined oral contraceptive pill (COCP) is a highly effective form of contraception and used to control fertility by almost 20% of women aged 16-49 years in the UK. Commonly used brand names (updated): Rigevidon, Microgynon 30, Gedarel 30/ 150 FACT.

Most women want their oral contraceptive to be a reliable and acceptable form of birth control that is convent and flexible and free from oestrogen related side-effects. FACT.

The Contraceptive Pill, Debunking Myths

All Oral contraceptives work by primarily inhibiting ovulation. FICTION. The Minipill works by thickening your cervical mucus, so that it is more difficult for sperm to get through. POP or progestin or progestogen only pills thin the lining of your womb, therefore making it much less likely that an ovum (egg) will implant there. This affects the motility in your Fallopian tubes, thus reducing the chances of fertilisation and in some instances, prevents ovulation (egg release) – this is particularly so with Cerazette.

Cerazette is an oestrogen-free, progestogen-only oral contraceptive pill (POP). FACT

The minipill is oestrogen free. Common brand names: Cerelle and Cerazette and Aizia and Nacrez and  Zelleta. It is also known as the progestin-only birth control pill, is an oral contraceptive that contains the hormone progestin. Unlike combination birth control pills, the minipill doesn’t contain estrogen. The progestin dose in a minipill is lower than the progestin dose in a combination oral contraceptive pill. FACT. 

Undesirable side-effects of the Pill occur only with COP. FICTION.

Undesirable effects reported by some women treated with Cerazette include: acne, breast pain, mood and libido changes, nausea and weight increase. FACT. 

Smoking cigarettes while using oral contraceptives has been found to greatly increase chances of serious side effects occurring. FACT. In particular, cigarette smoking increases the risk of serious cardiovascular side-effects from combined oral contraceptive use. The risk increases with age and with heavy smoking (15 or more cigarettes per day) and is quite marked in women over 35 years of age.

St John’s Wort (Hypericum perforatum) can speed up the breakdown of the hormones in Cerelle – progestogen only contraceptive – by the liver, which makes it less effective at preventing pregnancy. FACT. In fact, a list of medications that has a similar effect include aprepitant, bosentan, barbiturates, carbamazepine, crizotinib, dabrafenib, efavirenz,
eslicarbazepine, nevi rapine, oxcarbazepine, perampanel (12mg), phenobarbital, phenytoin, primidone,
rifampicin, rifabutin, ritonavir, rufinamide, topiramate, vemurafenib.

Cerelle tablets contain lactose and should not be taken by women with rare hereditary problems of galactose intolerance, the Lapp lactase deficiency, or glucose-galactose malabsorption. FACT.

Common side-effect of Cerelle or desogestrel affect between 1 and 10 out of every 500 women. FICTION. Common side-effect of Cerelle or desogestrel affect between 1 and 10 out of every 100 women. These include: changes in menstrual bleeding, eg irregular bleeding or sometimes stopping of bleeding, mood changes, including depression, decreased sex drive, headache, nausea, acne, breast tenderness, weight gain. FACT. 

Selegeline used to treat Parkinson’s disease and also as an antiageing supplement and an antidepressant should be avoided with the pill. FACT. Other brand names include, Deprenyl, Eldapryl, Emsam.

While you are on the Pill and you wear contact lenses – should you notice a change in vision or an inability to wear you lenses, contact your doctor or health care provider. FACT.

Combined birth control pills (oral contraceptives) can improve acne in women. FACT.  However, it should also be noted that melasma – a spotty darkening of the skin is possible – particularly of the face, which may persist.

Combination birth control pills and preston only birth control pills will not protect you from sexually transmitted infections. FACT. 

Monophonic and multiphasic are types of progestin only birth control. FICTION. Combination birth control pill can be categorised as i) monophasic: each active pill contains the same amount of estrogen and progestin and i) multiphasic: the amounts of hormones in active pills vary. FACT. 

Taking combination birth control pills or minipills (progestin-only birth control pills) during early pregnancy increases the risk of birth defects. FICTION. While some research has suggested a link between the use of birth control pills near conception and an increased risk of low birth weight, preterm delivery or congenital urinary tract abnormalities, these concerns generally haven’t been observed in clinical experience.

Combination birth control pills increase the risk of certain conditions. Some of these complications can be serious. They include the following: Blood clots in the legs, Gallbladder disease, Heart attacks and stroke (smoking greatly increases the risk of these complications), Liver tumours. FACT.
